Sunflowers are harvested in late summer to early fall in the Northern Hemisphere—most often September, with a typical window of July through October depending on variety, planting date, and climate. 
Seeds usually finish maturing 30–45 days after bloom, or about 80–140 days after planting. 
How to tell they’re ready
Look at the plant, not the calendar:
• The back of the head turns from green to yellow, then brown and dry. 
• Petals dry up and fall off.
• The heavy head droops downward.
• Leaves yellow and fade.
• Seeds are plump, firm, and fully colored (solid black or black-and-white striped). They loosen when you rub the head. 
Harvest too early and seeds are small and soft; too late and birds, squirrels, or rain take them.
